Whisky by Flavour - Feints - Leather
Leather is an aroma compound so will be found by nosing the whisky, not through the palate and tasting. Leather aromas are often found and associated with older aged scotch whiskies which have spent time in a refill bourbon or a sherry cask. The aromas are often described on tasting notes as a reminder of leather armchairs and wood-panelled libraries. It can also remind us of the smell of dried fruits which have been in an air-sealed bag. There is a reason why leather-bound books and antique furniture come to mind, the paper used for books uses wood pulp which has a shared set of chemicals that provide the flavours given from interaction with the oak staves of the cask during maturation. These aromas are then slowly released over a longer ageing period, similar to how new books don’t have the same smell that we recognise from old leather-bound editions.
