Whisky by Flavour - Confectionary - Honey

Honey flavours and aromas can be found in whisky from two sources during its production and maturation. Initial notes of honey can be formed from the aldehydes during the distillation process, these notes will be apparent on a new make spirit, often alongside fruity and floral aromas. The second influence will come from the maturation process, typically from ex-bourbon American oak casks as the greater influence of vanillin in the oak and sweeter flavours of bourbon whisky will provide honey flavours, however, these can vary from heather honey and bees wax to syrup and fudge flavours. Honey is often used for tasting notes where it combines with herbal notes for a lighter smooth whisky. Different to the influence of Toffee or Caramel flavours.
